More gold material + mechanical bonding = higher material and manufacturing cost.
But it can also provide a more substantial gold layer for products designed for frequent wear.

Vermeil is not simply “thick gold plating.”
The key requirement is the sterling silver base.
Under the FTC Jewelry Guides, vermeil consists of sterling silver coated with gold or gold alloy of at least 10K fineness and a minimum thickness of 2.5 μm throughout the relevant significant surfaces.
So:
Gold + Brass + 2.5 μm ≠ Vermeil
while:
Sterling Silver + qualifying gold coating = Vermeil, assuming the other applicable requirements are met.
